The gastronomy of Tunisia

Tunisian cuisine includes Mediterranean, Turkish, Arab and Italian influences. Traditional dishes include couscous mixed with meat, poultry, seafood or vegetables. Merguez is a popular spicy lamb sausage, while deep-fried pastries known as Fatima's Fingers are stuffed with meat and vegetables. Boutargue is a briny caviar prepared with dried, salted, and pressed flat eggs. Chorba is a rich stew filled with meat, vegetables and pasta, while mechoui, a festive spit-roasted lamb dish hails from North Africa. You’ll also find meloukhia, a lamb braised in olive oil with green sauce, and kamunia – a hearty cumin and meat stew. Egg-based tagines are filled with lamb, vegetables, eggs, potatoes, maluska leaves, and parmesan cheese. 

Tunisia is home to several sweet treats. Baklava is a delicious layered pastry often made with honey, dried fruits, almonds, and geranium water. Similar to custard, bouza features ingredients like sorghum, hazelnuts and sesame seeds. And don’t miss makroudh – a diamond-shaped baked honey pastry filled with dates and almonds.
